Confectioneries of Yazd

Baqlava, Loz, Yazdi Cake, Flat Cake, Haji Badam, Nan Berenji and Menqa (two types of sweetmeats), Yazdi Noql, Qottab, Candy Floss, Nut Candy, Sohan, Coconut Bread, and Shami Baqlava are the most important confectionaries of Yazd, some of which will be explained in brief hereunder:
Qottab
One of the most famous and delicious confectioneries of Yazd, which is produced in two types; traditional and asali (with honey). The outer layer of Qottab is a type of bread that is fried in oil. The ingredients of this bread are wheat flour, milk, yogurt, and egg yolk. Of course, Qottab is white because it is covered in soft powdered sugar after making it.
Inside this bread, they put a mixture of almond powder, sugar powder, and cardamom. The difference between Qottab Asali and normal Qottab is that honey replaces powdered sugar in Qottab Asali. Eating Qottab with Iranian tea would be an unforgettable pleasure.
Yazdi Cake
Yazdi cake, as its name suggests, is a special sweetmeat of Yazd, but today it has many fans all over Iran. Flour, yogurt, vanilla, sodium citrate, eggs, baking powder, and powdered sugar are the ingredients used in making this cake.
Baqlava
This delicious sweet is so popular in Iran that Iranians compare everything delicious to it! Of course, other parts of Iran also have a sweetmeat called baqlava, but in Yazd, a special method is used to prepare it. Egg yolk, oil, baking powder, salt, butter, rose water, white flour, sugar, pistachio powder, almond powder, cardamom, and sugar powder are the ingredients of baqlava.
Yazdi Candy Floss
A soft and light pastry whose appearance is similar to thin strings of cotton threads. Sugar, flour, cooking oil, and vinegar are used to prepare this sweet.
Menqa
This type of sweets is different from other Yazdi sweets in terms of appearance and taste. Starch, rose water, rice flour, white flour, eggs, saffron, powdered sugar, and cooking oil are the main ingredients of this sweetmeat, which can be used as a snack.
Suruk Bread
More of a bread than a sweetmeat, Suruk Bread is very popular among the people of Yazid who believe that this bread is more delicious when it is still hot. At times this bread is eaten with cheese and vegetables, like traditional Iranian breads, but it can also be eaten alone and as a snack.
Sangak bread flour, salt, coriander seeds, safflower, yeast, and sesame oil are the ingredients of Suruk bread.
Haji Badam
One of the most important sweets served with tea in Yazd, it is a type of sweet that is made with rose water, egg yolk, baking powder, powdered sugar, cardamom and almonds.
Floured Sohan
Sohan is one of the popular sweets of Qom province, but in Yazd, a form of sohan is baked that is different from the sohan of Qom. The use of wheat germ in cooking this sohan has greatly increased its nutritional value. Wheat flour, animal oil, sugar, lemon juice, cardamom powder, saffron, cooking oil, and cardamom juice are other ingredients used in baking floured sohan.
Yazdi Noql
Yazidis have a special noql that they use in celebrations, especially weddings. The main raw materials of this sweet are sugar and rose water. However, almonds, pistachios, or peanuts are also used in preparing it, which are usually placed inside of it. Contrary to its appearance, Yazdi noql is very delicious and has a memorable taste.
Yazdi Naan Berenji (lit. rice bread)
It may be possible to sweets similar to Yazdi naan berenji in other parts of Iran, but in Yazd, this sweet is prepared slightly differently and by using such basic ingredients as rice flour, sugar, eggs, white flour, oil, cardamom, and rose water.
