Ingredients
White flour: 300 grams
Eggs: three
Sugar: 200 grams
Thick yogurt: 150 grams
Liquid oil: 175 grams
Honey: one tablespoon
Baking powder: one tablespoon
Cardamom powder: one and a half tablespoons
Rose water: three tablespoons
Rose water gives a pleasant aroma to Yazdi cake, but be careful not to add too much, because it may destroy the sweet taste of Yazdi cake and even give it a bit of bitter taste.
Recipe
In order to start baking Yazdi cake, it is better that all the ingredients are of the same temperature. Therefore, you keep all the ingredients in the refrigerator and leave them for an hour before start starting the process of baking. If you do not follow this trick, your cake may not bake well.
You must use an oven to bake Yazdi cake. Set the oven to 200°C to heat up. Lowering or increasing the oven temperature may cause your cake to burn or not rise well.
By the time the oven heats up, you can make the dough for the cake. This dough should be stirred very well so that it is uniform and all the ingredients are well-mixed.
Beat the eggs in a suitable container with an electric mixer until completely smooth. Add the sugar to the eggs and continue mixing until the mixture thickens and becomes creamy in color. It is now time to add liquid oil. After adding the oil, continue stirring for a few more minutes. After that, you should add yogurt, rose water, cardamom, and honey to the mixture and stir the mixture for a few minutes between adding each of these ingredients.
Sift the flour and baking powder together to separate the powdery part. It is very important to remove the pellets, otherwise, hard grains may appear in the structure of Yazdi cake. Add flour and baking powder to the ingredients slowly in several steps, so that no part gets lumpy. After you have added all the flour and baking powder, the cake batter is ready to be molded. Note that the order of adding the ingredients is very important in the absence of which the cake may not be baked well.
Spoon batter into special paper cases very quickly. If you delay in doing this, the mixture may puff up around the mold during cooking, but not rise in the middle. To have beautifully domed muffins, the paper cases should be filled ¾ full.
If the oven has reached a temperature of 200 degrees, leave the filled paper cases it for 10 minutes to bake. The cakes puff up very quickly, when they puff up, lower the temperature of the oven to 180 degrees and wait another 10 minutes until the color of the cake turns golden. Now the Yazdi cake is ready and you have to take it out of the oven and let it cool down.
Certain Points to Be Observed in Baking the Yazdi Cake
Before pouring the cake batter into the paper cases, do not grease it. Because fat may enter the texture of the cake and prevent it from puffing. If you are using metal cases, wash and dry them well before using so that there is no trace of fat on it.
