Tabriz is one of the historical cities of Iran, which has been the capital of different governments in different historical periods and as a result, it houses many historical monuments inside and its suburban areas, which attract many tourists every year.

This city is also the origin of a variety of sweets and cuisines, among which mention can be made of Tabrizi Qurabiya; a very tasty and nutritious sweet and is considered one of the main souvenirs of Tabriz, Ardabil, and Zanjan.

Qurabiya is a very old sweet and there are different opinions about the historical period when it was first produced by the people of Tabriz. However, what is certain is that the age of Qurabiya reaches at least a few hundred years, making it a very traditional Iranian sweet.

This delicious sweet has a simple recipe and its ingredients are easily available almost everywhere!

 

Ingredients

Almond and pistachio kernels: 150 grams each

Sugar: 200 grams

Egg white: three

 

Recipe

Remove the skin from the almond kernel and then finely grind the white kernel of the almond. Pour the well-ground almonds along with the sugar into a bowl and add egg white to it.

Stir and mix the ingredients well until you have a smooth mixture. After mixing the ingredients, cover the container with nylon and put it in the refrigerator. It is better to keep the ingredients in the refrigerator for at least eight hours to ferment well.

Remove the mixture from the refrigerator, grind it again, and then knead it. Continue kneading until the mixture takes on a light color. It is better that the color of the mixture is completely white, to make sure that it will be an authentic sweet. If the dough has hardened at this stage, add another egg white while grinding, stirring, and kneading so that the mixture gets smooth.

It is now to bake the sweets. Set the temperature of the oven to 350 degrees Celsius. After heating the oven, cover the baking tray with oil paper and spread the pastry dough in the desired shape. Tabrizi Qurabiya is usually made in the shape of cookies and round, and choosing this shape is because it gets baked better. However, you can make it in other shapes as well. Sprinkle the finely chopped pistachio and almond mixture on the dough you have spread. Baking these nuts in the oven makes them crispier and makes the taste and aroma of the sweets more pleasant.

It takes 20 to 30 minutes to bake the Tabrizi Qurabiya in the oven. Remove the cookies from the oven, put them in a container, and cover them properly after they have become somewhat cool because if they come in contact with the air, they will become dry and hard out very quickly.
