Green Beans Kuku
Different types of a delicious dish called “Kuku” are made in Iran. Kukus are dishes in which ingredients such as mixed vegetables, green beans, or potatoes are combined with well-beaten eggs. They come in various shapes, flavors, and ingredients. Among the different types of kuku, the one made with green beans is especially popular in East Azarbaijan Province and is considered a traditional local dish of the people of Marand.
 
Required Ingredients for Four People
Fresh green beans: 500 grams
Potato: one
Carrot: two
Capsicum: one
Breadcrumbs: two tablespoons
Eggs: four or five
Onion: one
Oil, salt, black pepper, turmeric, and cinnamon powder: as per taste
 
Recipe
Chop the green beans to the size of about half a knuckle. Put the chopped beans in a pot and add one and a half glasses of water, and boil them for half an hour or an hour until the green beans are well-cooked. Drain the cooked green beans and let them cool.
Peel the carrots, chop them like the green beans, cook them in the same way as the green beans, and drain them.
Chop the potato and fry it in a pan. You do not need to submerge the potatoes in the oil, because you have to add the chopped onions in the middle of frying the potato and fry them together. When the onion gets golden and the potato pieces are fried, add a little turmeric and continue frying.
Take a rather big bowl, put the boiled carrots and green beans, as well as the fried onions and potato, and mix them. Now add the capsicum and two tablespoons of breadcrumbs to this mixture and stir the whole thing well. The purpose of adding breadcrumbs is to save the kuku from tearing and breaking apart during the frying process. Beat the eggs separately and add them to the mixture along with salt, black pepper, and cinnamon powder, and mix all the entire ingredients well. If you want to improve the appearance of your kuku, use several colors of capsicum. Sometimes, a little barberry is also added to the ingredients at this stage, which will make the kuku taste slightly sour. When the mixture becomes uniform, you can start the process of frying your kuku.
Place a pan over low heat and pour in some oil. When the oil is slightly warm, pour the mixture into the pan and spread it evenly. Cover the pan with a lid and let the kuku cook on low heat for at least half an hour. Once one side has firmed up, carefully flip the entire kuku to cook the other side evenly.
 
How to Serve Green Beans Kuku?
Garnish the green bean lulu with cherry tomatoes and parsley. This dish is served with bread, but if you like, you can also eat it with rice. In addition, the green beans kuku can also be served and eaten with raw edible vegetables, raw onions, pickled cucumbers, and tomatoes.
Among the various types of kuku, the green bean version is especially popular in East Azarbaijan Province and is considered a traditional local dish of the people of Marand.
