Tabrizi Eris
It is true that Tabriz is famous for its natural and historical tourist attractions, but no tourist wants to leave this city without trying its delicious sweets. There are various types of special sweets in Tabriz, of which “Eris” is one of the most famous ones. This delicious sweet is offered in different varieties of tasbihi, milky, crunchy, and cocoa. Apart from the tasbihi type, the other three types are made plain or with pistachios.
Eris is prepared in the form of a rectangular cube. It is usually wrapped in transparent nylons in pastry shops and this simple and transparent shape can invite the viewer to try it! Although you can cook Eris at home, nothing can take the place of traveling to Tabriz and eating this sweet in this beautiful city!
Ingredients
Milk: two cups
Sugar: one cup
Butter: 80 grams
Rose water: one tablespoon
Like many local Iranian sweets, making Eris is very simple and perhaps it is because of this simplicity that the people of Tabriz have been interested in it since the distant past and prepare it for entertaining their guests.
Recipe
Boil the milk in a small pot and then add sugar to it and stir it. Be careful that if you delay in stirring the milk, the sugar will settle and your effort will be wasted. When the milk boils, reduce the heat. This prevents the mixture from settling quickly.
When the sugar has dissolved well in the milk, add rose water and butter. Continue stirring until the mixture is completely smooth and slightly thick. Now you can pour the ingredients into small molds, let the mixture cool down and then and put it in the refrigerator for an hour. If you like, pour some pistachio slices on top your sweet after pouring it into the molds.
Sometimes, during the molding stage, the hot mixture is poured onto a wide tray. For this, you should put a thick nylon on the bottom of the tray, oil it properly, empty the Eris mixture on the tray, and sprinkle the pistachio slices on it. After this mixture has cooled down, cut it into the shapes you want and put it in a container. You can put it in the refrigerator for an hour after it cools down to make the Eris shape better.
Different Types of Eris
If you would like the Eris to be cocoa-like, add half a teaspoon of cocoa to it after mixing the milk and sugar well. You can also add a little vanilla to the mixture instead of cocoa to make milk Eris.
How to Serve Tabrizi Eris
When serving Eris, you can use rosemary leaves and saffron to decorate it. Iranians have a habit of eating sugar cube with tea, but in some places they take Eris with tea instead of sugar cube.
Elasticity is very important in the case of making Eris. If you want to make a tasty and stretchy Eris, be sure to take the recommended amount of ingredients. Meanwhile, mix the ingredients well and stir continuously so that it does not stick to the bottom of the pot.
