Pipokh Bread

Pipokh bread is considered a traditional delicacy of Jahrom and no one knows when, the first time, this simple and delicious bread found its way into the diet system of Jahrom people.

Ingredients

Spring Onions: 100 grams

Spinach: 300 grams

Yeast: one tablespoon

Flour: 500 grams

Sugar: one tablespoon

Salt and olive oil/ sesame oil: as per taste

In case of non-availability of spring onions, you can use onions instead.

Recipe

Chop the spring onion and spinach well and mix. The smaller you chop these vegetables, the better the final taste of the bread will be.

Mix the yeast in a bowl with lukewarm water and sugar. Then wait an hour for the yeast to ferment. Then pour the flour into a large container, make a hole in the middle, and pour the oil in the middle of the flour. Add the yeast to flour along with enough water and knead the whole thing. Note that adding water and mixing the ingredients should be done carefully and slowly, otherwise, the flour will be lumpy and the basic bread material will not be well-formed.

After mixing the ingredients and kneading them properly, cover it with a thin and clean cloth and wait an hour for the dough to swell.

After an hour, cover the tray or table with a thin layer of flour. Then divide the dough into equal parts and make it into balls. While doing this, press the dough well with your hand so that its structure is formed properly. Pay attention that if there is no flour on the table, the dough will stick to the table and will not allow you to work. Instead of flour, you can also use bran. Also, after making the balls of dough, sprinkle fresh flour on it to make it less sticky.

Spread the dough with a rolling pin, in a circular shape, put the chopped spring onion and spinach in the middle of the spread dough, and sprinkle some salt on the vegetables to make them taste better.

Place the edges of the dough on top of each other and make some holes in it with a fork. The holes should be such that it creates a hole only in the top layer of bread and does not make holes in the bottom layer.

Place a cast iron pan on the stove and wait until it gets well hot and then place the dough on it. After one side is baked, turn it over to bake the other side.

The baked pipokh bread can be eaten with butter or cheese. To make the bread last longer, cool it after baking, put it in a container, and cover it with a cotton cloth.
