Iranian dishes are mainly of two types: the ones that are served with rice and the ones served with bread. The dishes that are served with bread are usually thin such that bread is cut into pieces and placed into them and eaten after it is well soaked. There are also some foods that are eaten by putting sum in a piece of bread and consumed. What follows is a brief introduction to some Yazdi dishes served with bread, which are both delicious and nutritious.
Qaliyeh Kadu
Qaliyeh Kadu is a Yazdi food made with pumpkin. Legumes are also used in cooking this dish, but its most important ingredient is pumpkin, which is considered a natural anti-cancer agent due to containing abundant antioxidants. Unlike many other dishes of Yazd served with bread, Qaliyeh Kadu is not broth-like.
Abgusht-e Yazdi
Different types of abgusht are cooked in Iran, each of which has a special taste and ingredients, but the way of cooking and serving them is almost the same. The difference between Yazdi abgusht, which is also known as sour abgusht, and other types is the use of plums and fruit leather in it. Eating Yazdi abgusht will be very enjoyable for those who like sour foods.
Eggplant Abgusht
In addition to meat, usually mutton, the other main ingredients of this delicious dish are tomatoes and eggplant. Eggplant Abgusht of Yazd, which is called “Abgusht-e Tamateh (tomato) Bademjan” in the local dialect is usually served with raw eating vegetables, yogurt, and sangak bread.
Taas Kabab
Despite the fact that the word “kabab” is used in the name of this dish, it does not contain any kabab! Taas Kabab is a healthy food that is prepared with a combination of potato (or pumpkin), meat, onion, and tomato and with a recipe similar to other types of Iranian abgusht.
Yazdi Koftas
Yazdi koftas are exactly like Tabrizi meatballs, but the ingredients are different.
• Split Peas Kofta: the ingredients of which include aromatic vegetables, minced meat, split peas, raisins, blackberries, eggs, and potatoes.
• Carrot Kofta: carrots are used as the main raw material of this dish, so its taste is sweet.
• Rice Kofta: due to the use of walnuts and eggs, it is rich in protein and antioxidants.
• Chickpeas Kofta: Chickpeas Kofta, also called “Yazdi Kofta” is made of chickpea flour and minced meat to make small meatballs. These meatballs are then boiled in a liquid known as meatball sauce to get deliciously cooked.
• Kabab Kofta: The raw ingredients of this dish are similar to the Chickpeas Kofta, but they do not make a sauce to cook it. Unlike other Yazdi meatballs, this kofta is prepared by frying. In fact, this dish is more like “kabab” than meatballs! This fried dish is served with yogurt, vegetables, and buttermilk.
Kashk-o-Khiyar
A traditional Yazdi dish with a simple and dietary structure - made of kashk and cucumber - that, because of the cold nature, is eaten in hot seasons, especially on hot summer nights. To compensate for the cold nature of this dish, walnuts, pepper, cumin, garlic, and onion are added to it. Eating raw onion or chives with this dish can make it more enjoyable.
Kalleh Gipa
Also known as “Dolmeh Sirabi”, this dish has been inscribed - as a Yazdi cuisine - on the list of Iran’s intangible national heritage. This dish is especially popular among the people of Ardakan and Bafaq cities of Yazd Province. Sirabi (Rumen) is the main ingredient of this dish, which is very effective in treating anemia, strengthening the digestive system, treating hair loss, and strengthening the immune system.
Kabab Digi (Pot Kabab)
You will need a stone pot to cook this dish. Using this device in itself shows the longevity of this food. The ingredients needed to cook Kabab Digi are similar to Kabab koobideh, but instead of skewering and cooking it on the fire, after the initial mixture is prepared, they stick it to the wall of a stone pot and put the pot on the fire. As the pot heats up, the kababs stuck to its wall get fried and a very delicious meal with a memorable taste is created. Kabab Digi can be served both with bread or rice.
Dishes best served with bread are quite popular in Iran and Yazd is quite famous for having a number of delicious dishes that are eaten with bread.
